sweet and tangy patriotic salad.

Monday, June 27, 2016

Fruit is probably my favorite thing about summer. Seriously nothing beats bright, fresh, yummy fruit when the Vegas temps are at a scorching 112 degrees, except maybe a bright, crisp, tangy, fruit salad.

This quick and easy summer salad is perfect for light lunch and since it's bursting with bright reds, whites, and blues, it's perfect for any upcoming 4th of July get togethers.

This salad is made with fresh strawberries, blueberries, crumbled feta, and a delicious strawberry balsamic dressing. While this salad is delicious on its own, it would also be amazing with some herb rubbed chicken breast on top! yum.

I used a bottle strawberry balsamic because I wanted to make this as quick and easy as possible but you could very well make your own.

Simply toss your fruits, cheese, and dressing with your greens of choice ( I used baby spinach.) and enjoy.

Working mom.

Friday, June 24, 2016

It's 11:30pm and i'm sitting here...at a stand off with the last load of laundry that needs to be folded and put away. I've been up since 6:30am, moving non-stop. Running errands, cleaning, cooking, mothering...
and...it's my day off.

This is nothing, its summer time, I have a bit of a break. I mean, I have volunteered tirelessly at Jordyns school since Pre-k. I do testing, i'm room parent, and i'm there 3 days a week, 3+ hours a day. I sit on the board of the PTA.My family eats home cooked meals 5 days a week. I keep my house clean, my dogs walked, and no, aside from this last load of laundry staring me down, laundry isn't piled high or hiding in the dryer for weeks on end.
I run an entire household...I do it well......and, I work.

Shocking? It shouldn't be.
However, I do find that it surprises some people to find out that I have time to do the things that I do, work, AND be happy.
In fact...in first grade, the president of the PTA asked me to come in on a Friday night to help with some decorations.
When I told her I couldn't make it because I had to work, her response was well.......a little offensive. She stood there, looking confused and questioned, in a tone that suggested it was beneath her.... " YOU HAVE A JOB?!"
*sigh....eyeroll.*

Contrary to what the internet may have you believing if you're not an entrepreneur, not everyone that isn't working for themselves hates their job.
I enjoy my job...I am happy at work.. Genuinely happy.
See that smile? Thats the smile of genuine happiness on my way to work.

I work at a local brewhouse. My job is fun and fast paced and i'm happy. I make great money, the staff is all very close, the company treats us all really well, the owner doesn't parade around as if he's above his employees...instead he treats everyone like family. It's really a great job. The best thing about my job is that it gives me the flexibly to be the mom that I want to be. I work Friday, Saturday, Sunday, and Monday nights, which leaves me free to be mom during the week. I'm also able to take vacation and time off basically any time I want or need. My job allows me to leave work at work, so that I can focus my time and attention on my family.

Running a household, being active and present in my daughters life, being present in my relationship, taking time for myself and working outside the home....isn't easy, in fact, it requires a lot of balance...it's all about balance.

I find work/life balance in a variety of ways.

1st: I plan and write out everything. In a notebook and a planner. I plan out each week from meals, to activities, to grocery shopping, to bills, to house cleaning, to PTA agendas, to me time,....everything. Literally, the key to my time management is having a written, planned out agenda. The key is to plan but not over-plan. Don't sink yourself with too many demands.

The planner I use is this MAMBI Happy Planner .

2nd: I prioritze "ME" time. Setting aside time for myself daily, whether its a full day or 30 minutes, helps me feel happier, more fulfilled, and all around more balanced.

"ME" time is different for everyone but here are a few fun ideas.

and lastly, I set my boundaries.

When I started working, during the interview I was very clear about what schedule I could work and that my daughter and family was my priority. I think a lot of working moms feel guilty because they give so much to their workplace and hardly ever say no.

Remember that its ok to say no. Setting your boundaries are crucial to your work/life balance.

Working mamas;
Set your boundaries, connect with your spouse, share the chores, lower your expectations, and ditch the "working mom" guilt.

Watermelon Agua Fresca

Thursday, June 23, 2016

When you think of Summer....you think of watermelon.
Watermelon is king of summer and takes full reign over most recipes during the season.

Jordyns bestfriend is coming over to hang out for a few hours today and they plan on playing outside, so I whipped up some yummy, sugar free watermelon agua fresca as a sweet way to keep them cool and hydrated.

What exactly is agua fresca?

Agua Fresca is spanish for "fresh water". It's made by blending fruit and water to make light, refreshing drinks. Some people add sugar to their agua frescas, I chose this naturally sweet fruit so I skipped the added sugar.

You only need 4 ingredients for this sweet drink.
Really, you only need 2 but I added some lime and mint to give it an extra little kick.

Start with your watermelon. Slice it open and admire the gorgeousness that is the king of summer.
I mean, come on...if that bright red juiciness isn't a symbol that summer is here....what is?

Dice your watermelon and add 6 cups of it to the blender with the juice of 1/2 a lime.
Blend until smooth.

Strain your liquid through a fine mesh sieve into a pitcher.

Add 3/4 cup water, some lime slices, and a few sprigs of fresh mint and stir!
Refrigerate for 30 mins to an hour and then serve over ice.

This is such an easy drink to make and every sip is so refreshing.

And I mean, if you choose to add a splash of vodka.....it'll be our little secret. ;)

Summer reading.

Wednesday, June 22, 2016

Yesterday Jordyn and I were talking about books we've been reading lately. I'm currently reading A Game Of Thrones and she's bouncing between informational text, Junie B Jones, and Goosebumps ( Zeke was able to find her the entire Goosebumps series in ebook form for 5 dollars!). We talked about our characters and the plots of our stories, what we hope is going to happen and what we hope doesn't happen. Jordyn shares my love of books and its a beautiful thing.

This summer she has challenged herself to read 15 chapter books!
The girls got big goals. lol.

To help keep her motivated and add a little incentive for her reaching her goal we signed up for our local libraries Summer reading program, Club Read

Its a fun, free, and easy program. For every 20 picture books or 10 hours the child reads, they get a free book plus an entry for the grand prize drawing.....which happens to be a Target Giftcard!

She's also participating in the Barnes and Noble Summer Reading Triathlon, which is another fun way for kids to earn a free book.

To keep track of how close she's getting to her goal of 15 books, I printed this Summer reading log off of Carrieelle.com

I'm super proud of her for challenging herself to do this. And of course, I promised her a surprise if she reaches her goal.

What are some of your Summer reading plans?
